My life has been changed forever. Ok, I’m dramatic, but this is a dessert game changer. I’ve found a new way to have ice cream that is not only delicious, but pretty darn healthy. (I use that term loosely, I am not a nutritionist and will never pretend to be!)
No, I’m not talking about sorbets, or fruit smoothies, or that stuff you’ve heard about before that will trick you into eating something fruity when you’re craving something savory. This is all about my new favorite freezer accessory – bananas. I know, it’s a fruit, but hear me out …
I first heard about the frozen banana phenomenon at our local beer garden, where food trucks often park for easy access to summertime snacks. (I know, it’s almost painful to reminisce about summer right now.) Amanda Bananas makes soft-serve style dessert out of frozen bananas – in many flavors. And it tastes pretty similar to ice cream – maybe even better because it doesn’t have any artificial flavor.And then I thought back to my college days, when I would take frozen bananas, skim milk, and some chocolate Carnation Instant Breakfast for some pre-lecture energy, or for a guilt-free late night snack when I was craving something sweet. I still make these smoothies, so I thought …. why not try to make some Amanda Banana style “ice” cream?
The result? I doubled my banana purchases and am actually liking this sweet goodness more than regular ice cream.
Try it yourself and you’ll be surprised by how easy it is to make something so healthy and delicious. It will change the way you think about the midnight munchies.
Skinny Peanut Butter Banana "Ice" Cream
Ingredients
- 2 bananas sliced and frozen
- 2 heaping tablespoons peanut butter
- 4 tablespoons milk
Instructions

If bananas are frozen, thaw for about 5 minutes. (If bananas are fresh, slice and then freeze for about 1 hour.)

Add bananas, peanut butter, and milk to a food processor or blender. Blend until smooth.

Add additional milk if needed for a smooth and creamy texture.
