I’ve been wanting to make butternut squash soup for a while and found a few recipes online. I ended up combining some recipes and winging it and I think it turned out pretty darn good. I wanted butternut squash soup with apple because the apple really adds some sweetness and flavor. It’s just a fruit and veggie pair that I think works deliciously. And of course, I wanted to make it in my Crock Pot so it could simmer all day while I was at work.
It was super easy – just chop the butternut squash and apple into cubes and toss them into the Crock Pot. Add chopped garlic and onion.
Add vegetable broth and 1 can of water. Cook on low for 6-8 hours (or however long you are at work).
So when you get home from work, play, errands, or whatever, sweet cozy delicious soup is simmering and waiting. All you have to do is puree in a blender and add some salt, pepper, and a pinch of cinnamon to taste.
I ended up pairing the soup with another new recipe – Turkey, Apple, and Brie sandwiches. Recipe to come very soon!
Butternut Squash & Apple Soup
- 1 butternut squash
- 1 apple
- 2 gloves garlic, minced
- 1 small onion, chopped
- 1 can (8 oz.) vegetable broth
- 8 oz. water
- 1/2 tsp. salt
- pinch pepper
- 1/2 tsp. cinnamon
Peel and cube the squash, removing any seeds. Peel and cube the apple, discarding core. Add the squash and apple into slow cooker. Chop onion and garlic. Add to pot.
Add vegetable broth. Fill can with water and add to pot.
Cook on low for 6 – 8 hours.
Puree soup in a blender (or with an immersion blender) until smooth.
Add salt, pepper, and cinnamon (to taste). Enjoy!
